Evelyn Hall's Yams and Dried Apples

Cut five yams in quarters and par boil.  Drain in colander and let cool.  Peel off skins.

Slice one more time, into rounds, and start to line a casserole (souffle pan works well), with a layer of sweet potatoes.  Dot with butter, drizzle with brown sugar, layer with dried apple, rounds.  Repeat, a layer of yams, dot with butter, drizzle with brown sugar, layer with dried apple rounds...and so on until it fills the casserole allmost to the top. (optional, a tiny bit of cinammon and nutmeg sprinkled on each layer, before the dried apple layer)

Pour a cup and a half of fresh orange juice over the yams and apples.

Bake in the oven for one hour at 350° F. 

Serve hot.
