A Cinammon Sugar Cookie PDF Print E-mail

great for tea parties, perfect for Xmas cookies

½ cup butter, softened
1 cup granulated sugar
1 egg, beaten
1¾ cups sifted flour
2 teaspoons baking powder
1 egg white, lightly beaten
1 tablespoon sugar, mixed with ¼ teaspoon cinnamon
 
Cream butter and sugar and stir in well beaten egg. Sift flour and baking powder together in a separate bowl. Add flour mixture in three portions, blending with creamed mixture to make a soft dough.

Wrap in wax paper and put in refrigerator to chill. When cold, place on well floured board (or use powdered sugar), then roll out about 1/8-inch thick. Knead in a little more flour if needed. Cut with cookie cutters or just a glass to make cookies. Brush with egg white and sprinkle with cinnamon sugar mixture. Bake on a lightly greased baking sheet at 275° about 20 minutes or until lightly browned.

Makes about 2 dozen cookies.
