Peaches in Sauternes PDF Print E-mail

It’s a California thing but we love out of season fruit when it’s good.  There’s something decadent about it.  And in the summer, this dish is ridiculously good.

6-8 ripe peaches
3 tbs sugar
1 bottle of good french sauternes
1 tbs grand marnier

Boil water in a large pot and immerse the peaches in the water for 1 – 2 minutes until the skins are loose.  Remove the peaches with a slotted spoon, place in a bowl of cold water to stop cooking.  Peel peaches and slice them in wedges into a bowl.  Stir in sugar, Sauternes and Grand Marnier.  Cover and refrigerate for at least 2 hours or overnight.  Take out of the refrigerator for at least 15 minutes before eating, so they’re not too cold.
