In light oil, olive, grapeseed, whatever, toss whatever leftover chicken you have, roasted, grilled, barbecued.  If you’re in a spicy mood, dice some onions and add them, too, and maybe some chopped tomatoes.  Cook until hot but don’t overcook. 

Warm some tacos in the oven, then add the chicken and serve with chopped tomatoes, guacomole, chopped onion, chopped lettuce, salsa, sour cream and hot sauce
