Baked Sicilian Fish PDF Print E-mail

Preheat oven to 400°F.

One whole white fish, cleaned and boned.

1 onion
3 tomatoes
1 green bell pepper
exrtra virgin olive oil
1/3 cup (or more) of white wine
Fresh basil chopped


In a large bowl, combine chopped onions, chopped tomatoes, chopped peppers and about a third of a cup of olive oil, tossing to coat.

Rinse fish well (or have it well-cleaned) and pat it dry.  Place in a baking dish.  Sprinkle fish inside and out with salt and pepper and cover with the vegetable mixture.  Pour white wine over the fish.

Bake for 30 or 40 minutes until is fish is opaque.

Transfer to a serving platter, fish and vegetables and sprinkle with fresh basil.
