Barbecue Sauce PDF Print E-mail

4 cups ketchup
1 lemon, grated zest
2 lemons, juiced
¼ cup creole mustard
1 ½ tablespoon Tabasco sauce
¼ cup Worcestershire sauce
2 tablespoons molasses
2 tablespoons sugar
1 clove garlic, chopped
2 tablespoons red wine vinegar

Combine all the ingredients in a large non-aluminum saucepan and warm over low heat. Do not let it simmer or bubble. Remove the sauce and let it cool. Place the sauce in an old metal pot and set close to the smoking fire to absorb the smoke flavors.

Makes about 5 cups.
