Cooking time: 25 min

Slice carrots thinly

Chop raisins, dates, dried figs, prunes (or any combination of these)

Dried fruit to carrot ratio is 1 to 4

Sautee onions in butter (if you’re kosher, use grapeseed oil)

Throw carrots in with the onions

Turn the heat up and fry a little bit

Then cover and cook on very low heat for 10 minutes, then add dried fruit mixture and cook on low for another 5 minutes. Now add 2 tablespoons of honey. Let cook on low for another 2 or 3 minutes and then add more honey to taste if necessary. (this is the healthy version, but it tastes better with brown sugar instead of honey). Cook until very soft.
