Easy Macaroni & Cheese PDF Print E-mail

1 box elbow macaroni
2 tablespoons butter
2 tablespoons flour
2 cups milk
1 teaspoon of a good dijon or dried mustard powder
1 teaspoon paprika
Salt and pepper to taste
2 cups shredded sharp cheddar cheese

Preheat oven to 350°F.

Prepare macaroni by directions on box and
 drain well. 

In a saucepan, melt butter over medium heat.  Add flour and stir to remove lumps.  Pour in milk and cook until slightly thickened.  Season with salt and pepper and mustard or mustard powder.  Add cheese and stir until melted.  Add macaroni and stir. 

Pour mixture into 2 qt. casserole dish.  Bake for 20 minutes.

You can substitute some or all of the cheddar cheese with gouda, mozzarella, or swiss cheese.

(for a blander dish, leave out the mustard and the paprika, use a mild cheddar cheese)
