Evelyn Hall’s Baked Beans PDF Print E-mail

When I was little we had a Southern cook and she made the most amazing, well everything, really.  But she made the most amazing baked beans.  It’s kind of a little bit of this and a little bit of that but here’s her recipe:

a can of vegetarian beans
a can of pork and beans

In a casserole, mix the two cans of beans, stirring gently so as not to break any of them.
And add, 2½ teaspoons of dark molasses, 3 heaping teaspoons of light brown sugar, 1 heaping teaspoon of dijon mustard.  Mix gently.

Lay strips of bacon on top of the casserole.  Bake in a 375º oven for 20 minutes or so
until casserole is bubbling and bacon is crispy.

It’s a little retro but it’s great.
