traditionally served on Friday nights in the South with pan fried fish
2 cup self-rising corn meal
¾ cup milk
1 small onion, finely chopped
1 egg
Pinch of garlic powder
Vegetable oil or shortening
Combine corn meal and onion and garlic powder.
Add milk and beat the egg and add it, too, stirring well.
Carefully drop by tablespoons full into deep hot 370° F oil. Cook only a few at a time, turning once. Fry until hush puppies are golden brown (3 to 5 minutes).
Drain on paper towels.
