As the raw craze is even starting to affect us!  We think this recipe's great.

6 small raw beets, trimmed, peeled and thinly sliced
1 tablespoon balsamic vinegar
3 tablespoons mild olive oil
1/4 teaspoon cumin seed
salt & freshly ground black pepper

Toss beets with vinegar, olive oil, cumin seeds, and salt and pepper to taste in a bowl. Chill well.

(We think this is great with a tiny sprinkling of fresh juice from an orange and a tiny bit of orange zest mixed in.)
