Slightly Souped up Mac and Cheese PDF Print E-mail

This is sort of a great variation on mac and cheese, but you have to be in the right mood for it and it might be advisable not to tell anyone what’s in it...

Pre-heat oven to 350° F

2 cups small curd cottage cheese
1 cup sour cream
1 egg, lightly beaten
¾ teaspoon salt
Garlic salt and pepper to taste
2 cups grated sharp Cheddar cheese
1 (7 ounce) package elbow macaroni
Paprika (optional)

Boil macaroni according to directions on package and drain in a colander. 

In a large bowl, blend the cottage cheese, sour cream, egg, salt, garlic salt and pepper. Add cheddar cheese, mix well.

Add the cooked macaroni and stir until coated.

Spoon into a greased 2½-qt. baking dish. Bake, uncovered, at 350° F for 25-30 minutes or until heated through. Sprinkle with paprika if desired.
