A Summer Smoked Salmon Sandwich

(that’s almost like a tea sandwich)

2 slices of fresh challah bread
Whipped cream cheese
4 slices Scottish Smoked Salmon (or other good smoked Salmon)
3 thin slices of an heirloom tomato
4 slices of cucumber

Do not toast the bread. Lightly spread cream cheese on one slice of bread.

Layer the smoked salmon on top of the cream cheese. Then layer on the cucumber. Then, the three slices of heirloom tomatoes.

Top with the other slice of bread. Cut in half.

Completely delicious. And maybe even good for you.
