Peas and Pancetta

This side dish is fast, easy and tasty. A perfect accompianment for grilled chicken or fish or as a green side for a simple pasta.

Serves 6

1 1lb bag Frozen Peas -- Defrosted
3 Shallots chopped fine
2 Garlic Cloves
1/4 cup of fresh Italian Parsley
Zest of 1/2 a Lemon
2 tablespoons Olive Oil
4 oz of diced Pancetta
Kosher Salt
Freshly Ground Pepper

Heat oil in a large sauté pan over medium-low heat.

Saute the pancetta until lightly golden. Add the shallots, garlic, salt and pepper and cook for another minute until tender.

Add the peas and lemon zest.

Sauté until heated through. (4 to 6 minutes)

Add the parsley and remove from heat.

Season to taste with salt and pepper.
