superfoodI love breakfast, but I also find it the easiest meal to skip. I get bored with traditional breakfast foods like eggs and cereal and pancakes day after day. Sometimes I eat leftovers from the previous night's dinner for breakfast but more frequently I just skip it entirely. I know skipping breakfast is not a good idea and so I'm always looking for tasty breakfast solutions, especially ones that take little time to prepare.

My latest weekday breakfast is what I am calling superfood cereal. It's based on a Canadian cereal I tried at the Winter Fancy Food Show called "Holy Crap." It's made from chia, hemp, buckwheat and some dried fruit and it soaks in milk for 15 minutes before you eat it. It tastes a lot like tapioca pudding with a bit of crunch from the buckwheat, though not quite as sweet as pudding. What's most amazing about it is how little it takes to satisfy. Just a few tablespoons of cereal and a quarter cup of milk and I swear for hours I am not even the slightest bit hungry.

herb-brush.jpgAny night this summer, you’ll find me hanging with friends, raising a frosty one in the backyard, while the kiddies run around and the guys flip steaks, burgers and chops. Is there anything better?

I’ll be using one of my favorite grilling tools, a do-it-yourself “herb brush” which I use to baste the meat while it cooks. Besides looking cool, it lets you slowly, steadily and subtly layer on the aromatic oils in those herbs, while keeping the meat moist. Using kitchen twine just tie a bunch of fresh herbs (any of your favorites will work: thyme, rosemary, sage, …) to the end of a wooden kitchen spoon. I like a really long spoon and it will make it easier to baste with.

And when you are done basting, you can chop up the herbs and add them to baked beans or sprinkle over grilled vegetables—you can’t do that with a regular basting brush! Herb brushes are great on beef, and on Fourth of July there's nothing I like more than an over 1-inch Rib Eye. Here's how you do it:

potatoes sundried.aPotatoes are one of the most versatile vegetables and can be used for breakfast, lunch, or dinner. Latkas and scrambled eggs for breakfast, creamy potato soup for lunch, and paired with some tomatoes, zucchini, and onions for a simple, but rich tian for dinner makes everyone in my house very, very happy.

When I was contacted to participate in a food challenge over at Kitchen Play, I gladly accepted.  Upon finding out that the special ingredient was potatoes, I secretly jumped for joy. Potatoes, whether roasted, baked, sauteed, or fried are always a great accompaniment to any meal. I serve potatoes at least twice a week, and with us transitioning into a more gluten free lifestyle, potatoes have become our starch du jour!

I didn’t want to hide my potatoes in a gratin (don’t get me wrong, I love gratins) or a soup. My hopes were to keep the authenticity of the spuds while at the same time creating a snack (or appetizer) that both kids and adults could enjoy.

chorizo.jpgI consumed so many delicious things this year, it's really hard to pin down one meal or one bite. But if there was a night that stands out, and a single dish that truly made me happy, it has to be a sausage sampler that I consumed with my best friend Don in early November.  He showed up one night with some Spanish chorizo sausages, a blood sausage, a couple of wedges of runny cheese, and a small cooler with a few kick ass craft beers in it.

We pan fried the sausages with a little olive oil, then poured some of Stone's Vertical Epic 11.11.11 into the pan to finish them off. This year's offering from Stone (their 10th beer in the Vertical Epic series) is a strong Belgian ale spiced with cinnamon and anaheim chilies from Hatch, New Mexico.  It was the perfect compliment to the sausages. We drank the rest of what the sausages didn't swim in.  Then we drank another bottle.

Among the sausages we stuffed in our faces that night was my homemade catalan-style pork and garlic sausage.  If you like the simplicity of pork and garlic, you'll absolutely love this.  And who doesn't like meat in tube form?

perfectomeletteI was never a fan of the omelette until I tried the one at Petit Trois, Chef Ludo Levebvre’s LA-based French bistro. It is quite rich and intense - thanks to a very generous helping of Black Pepper Boursin cheese - yet light and creamy, just melting in your mouth. What other cooks call an omelette is just a dry, tasteless, overcooked travesty compared to this version. It is a simple plate of food perfectly crafted each and every time. Chef Ludo has exacting standards in the kitchen and he expects his cooks to make it the same, classic way plate after plate.

We aren’t overly talented in our kitchen, so we figured this dish would be relegated to our sporadic visits to the restaurant. Lucky for all of us, in his new video series, Ludo à la Maison, he shares the recipe and shows you how it’s done. Now you don’t have to live in LA to enjoy the Perfect French Omelette. The Boursin is a must - though thankfully widely available and inexpensive - and most kitchens should readily have the other ingredients on hand - butter, eggs, salt, pepper and chives. Only six ingredients. Totally easy, right?

After watching the video a few times - he talks you through it, but it’s still sort of freeform - we gave it a try and did, for two amateur cooks, a pretty good job. Yes, it took two of us. There were some tense moments in the middle when it looked like it was too wet and was going to color before it set, but we managed to keep it from browning (a super big no-no) and properly wrapped it. While not perfectly pretty, it disappeared from our plate as quickly as the true version does. Success!
