cumcumber-tomato-and-garbanzo-bean-saladThis salad makes a regular appearance at my house. It looks very summery but I serve it all year long, assuming I can get decent tomatoes.

It's almost not even a recipe because there is nothing to putting it together. Some light chopping, opening a can and pouring the seasoned rice vinegar over the top. But it's so delicious, so flavorful. In fact, this would be enough for me to call it a meal. However, I have a husband who claims it's not a meal without meat. So yeah.

I always have these ingredients in my house. I often run out of lettuce but these ingredients are around...always.

The seasoned rice vinegar is the key (not the regular). It's the perfect dressing and it's so low in calories compared to salad dressing. No oil is needed either. Give it 15 minutes to marinate and you are done. I won't tell you how good it is with crusty garlic bread.

Cucumber, Tomato and Chickpea Salad
Serves: Serves 4

Ingredients:

2 large vine-ripened tomatoes, chopped
1 English cucumber (this is the one without the seeds), chopped
1 (15 ounce) can chickpeas (Garbanzo beans)
2 Tablespoons finely chopped red onion
1 cup chilled seasoned rice vinegar (more or less if needed)
freshly ground black pepper

Directions:

In a large bowl gently toss together tomatoes, cucumbers, red onion and chickpeas with seasoned rice vinegar. Let sit for 15 minutes to marinate, stirring a couple of times. Season with pepper and serve.

steamedclams.jpgHi, I'm Dave and I'm a shellfishaholic. My wife wants me to stop writing about shellfish because they aren't everyone's cup of tea. But I can't resist the temptation. When we were in Boston recently, the one restaurant I had to visit was the Union Oyster House. While Michael and Michelle rested at the hotel, I snuck away and happily indulged in a dozen oysters and a bowl of clam chowder.

Today at the Santa Monica Farmers' Market, Carlsbad Aquafarm had fresh oysters, clams, mussels, and live abalone. I wanted to buy everything. I showed some restraint. I only bought the oysters and clams.

A nice thing about shellfish is they keep in the refrigerator for several days as long as you follow a couple of suggestions. Oysters need to be stacked in a bowl with the rounded part of the shell down, so the oyster sits in its own liquid. Clams will drown if they're submerged in water. Save a plastic basket that comes with strawberries. Cut it in half, put it on the bottom of a bowl and the clams on top. That will keep the clams above any water they spit out while they're waiting in the refrigerator.

puff-pastry-tomato-tartsThese! Are they not gorgeous? I think they kind of scream summer in their own not-so-subtle way. They are certainly eye-catching on a platter together.

There is something about puff pastry. It has this way of making everything so darn cute, elegant and fancy all at the same time. If you have never used it, please give it a try. It's so easy to make something beautiful with it. No skills necessary.

I saw this container of colored tomatoes at Costco and had to get them. This was definitely the perfect dish to show off the diversity of their colors. However, using all red tomatoes will be as equally striking. You decide which to use.

Remember, tomatoes are one of the top food sources for daily doses of vitamin C, vitamin A, vitamin E, potassium and fiber. So eat up!!

Filled with goat cheese and herbs, there couldn't be a better appetizer. However, these make a great side dish too.

matchapancakeThe bright, vegetal flavor of matcha is reminiscent of the satisfyingly rich, bitter notes of pure dark chocolate. Both of which are an acquired taste. Over time, my taste buds began to crave the grassy notes of the finley milled Japanese green tea powder.

Considering that it's an expensive treat, I've kept it out of my cookies, cake and bread batters (which often require a bit too much then I'd like to spare) and have reserved it for a vanilla rose marshmallow latte, salad dressing & orange blossom tapioca.

As the snow fell like confectioners sugar from the sky yesterday (dusting the ground with glittering flakes), I was inspired to make my way to the stove and whip up a batch of whole wheat pancakes for lunch. I quickly realized that I was out of syrup and thought that a touch of powdered sugar would do the trick.

And then the jar of matcha whispered my name. Just like that I found myself sprinkling delicate sugar from one hand and matcha with the other onto the warm pancake (some powder melting into the pancake to deeply flavor the whole wheat and other bits lingering on top for color).
